At the moment you can only hear about one topic, the Corona virus! The whole thing has developed really fast and is already frightening. But you shouldn’t spread panic, because that only makes things worse. Meanwhile the shelves in the shops are filled up again, but last Friday I couldn’t find any yeast or dry yeast anywhere! I just wanted to bake bread, because it is a hobby, not because I am panicking that there will be no more food soon. But because of all the hamster purchases all the yeast was sold out. Fortunately I was able to find some dry yeast at home.

Even though the present time is very uncertain and frightening, it has its good sides. I think the measures are very appropriate and important and I have to admit that at the moment I actually find it quite pleasant to have an excuse to stay at home. You can slow down a bit, take more time for yourself again and do things you never have time for otherwise. For example, I have already mucked out and cleaned. I also save myself the traffic jams in the morning and evening on my way to work because I can now work from home.

So I have more time in the morning to enjoy my breakfast and my breakfast is holy to me. That’s why you get a breakfast recipe today. It’s tasty, vegan overnight oats. They save even more time in the morning, because you make them the evening before. And they are prepared very quickly. Just mix the ingredients together, put them in the fridge and look forward to the next day. For this recipe I used the vanilla yoghurt from The Coconut Collaborative (advertising) that they kindly sent me. I’m not vegan, but I’m always happy when I find delicious vegan alternatives and can therefore do something good for the animals and the environment.

In the next few weeks I will certainly do myself and everyone else some good and enjoy the time at home.

Vegan Vanilla-Coconut Overnight Oats with Banana

  • Serves: 1


  • 70 g oats
  • 100 g Oatmilk, or any other vegan milk
  • 60 g vegan vanilla yoghurt
  • 1 tsp chia seeds
  • 1 tsp maple sirup
  • 1/2 banana
  • some walnuts, optional
  • some coconutflakes, optional


  • 1)

    Mix oatmeal in a bowl with oat milk, yoghurt, maple syrup and chia seeds. Place in the refrigerator overnight. The next day cut the banana and enjoy the Overnight Oats with the banana pieces, some coconut flakes and walnuts.
